The idea 💡 We use a balloon filled with warm water, around 40–50°C. Dry ice is placed in the center of a tray. At the back of the tray, there’s a small hole with a needle positioned inside. Right before serving, we push the needle to pop the balloon. As the warm water mixes with the dry ice, a reaction occurs instantly, creating a dramatic fog effect — just like what you see in the video.".

Take our house-made coffee kombucha: brewed from used coffee grounds and used as the base of our Stellenbosch Sour cocktail. It’s just one example of how we rethink what’s possible in the kitchen. Here’s what you’ll need to make it: – 830g used coffee grounds (or 600g freshly ground coffee) – 2 litres water – 270g sugar – 230g backslop (or buy a SCOBY from Theonista via Faithful to Nature) A few do’s, don’ts & safety tips before you start: ✅ Do use a breathable cloth (not a sealed lid) during fermentation ✅ Do taste daily—your kombucha will become more acidic with time ❌ Don’t use airtight containers for the fermentation stage. ❌ Don’t use square-shaped bottles or jars—they’re more prone to cracking under pressure ❌ If bottling, use swing-top bottles and burp them daily to avoid pressure build-up (or explosions!) ❌Always leave headspace in bottles before refrigerating 📍 Want to taste it before you try it?
