Creator @fromscratchfarmstead Jim stumbled upon a similar recipe for farmhouse cheddar and has been making it every other week for the past 4 years. It’s the perfect compliment to mozzarella. Between the 2, all of our cheese needs are met :). This is not a true cheddar because it doesn’t go through the cheddaring process (an extra technique that gives cheddar it’s sharpness) and it doesn’t age as long as cheddar. But it’s a mild cheese that we think has the delicious hints of parmesan with a smooth, creamy texture.
